Love doughnuts? Then you’re going to love the following banana fritters recipe. My kids absolutely love banana fritters. What makes the following recipe special is that it’s the healthy version. They are absolutely delicious and you don’t have to feel guilty about sneaking and eating extras. Hope you try the recipe and enjoy the banana fritters as much as my family and I do.
3 ripe bananas
1/2 cup Almond milk
2 eggs (Optional)
2 1/2 cups all-purpose flour (I use whole wheat flour or Pamela’s Gluten-Free Flour -optional)
1 teaspoon vanilla essence
1 teaspoon almond essence
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
small piece of ginger grated (optional – but ginger gives it a great flavor)
1/4 cup oil for frying (I use coconut oil, but this is optional)
1 cup confectioners’ sugar for dusting
In a large bowl, mash the bananas until nice and smooth. Mix in the eggs, almond milk, vanilla and almond essence and continue mixing until smooth. Add the ginger, flour, baking powder, salt, and cinnamon. Stir everything up. It should have the same consistency of pancake batter, except just slightly lumpier. So in comparison to pancake batter, if the fritter batter is too watery then add flour. If it’s too thick add some more milk.
Heat oil in a NON-STICK pan. Drop batter by pot spoonfuls into the hot oil and cook, turning once until each side brown. You only need to turn the fritter one time on each side in the oil. Drain on paper towels and dust with confectioners’ sugar. Again…make sure you’re using a non-stick pot otherwise they would stick.
