Gluten-Free Cake: “No-Flour” Ginger Lime Cake

100_0929This is what I’m talkin’ bout…NO-FLOUR Ginger LIME CAKE…and so damn delicious too! It’s also very easy to make. My family and I “killed” this baby in two sittings. It was so good there was no need for me to make coconut creme frosting as I like to do.

By the way, when I say “No-flour” I mean the cake was made with a combination of home-made flours from nature (coconut and cassava flour). My hubby made the Cassava Flour and I made the Coconut Flour using our Vitamix and Nesco Dehydrator
. You can buy these flours online or I highly recommend another gluten-free substitute which I’ve used in the past while living in the United States. So without further ado here is the recipe:

NO-FLOUR Ginger Lime Cake

1 cup butter
2 cups brown sugar
3 eggs
2 TBSP vanilla essence
1 cup cassava flour Click Here To Buy Cassava Flour

1/2 cup coconut flour (Organic Coconut Flour)

NOTE: Instead of Cassava and coconut flour you can substitute with 1 and a 1/2 cups of Pamela’s Gluten-Free Flour

1 TSP baking powder
1/2 lemon (squeeze the juice into the batter)
1 TBSP fresh grated ginger
1 TBSP cinnamon powder

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×9 inch pan

1. Blend butter and sugar using electric hand mixer
2. Add the eggs and continue to blend on high until batter is rich and creamy
3. Add all the other ingredients to the batter expect for the flour(s) and continue to blend
4. Add flour(s) by sifting and continue to blend until the batter is smooth
5. Pour or spoon batter into the prepared pan and then bake for 30 to 40 minutes in the preheated oven or until a fork stuck in the middle of the cake comes out clean
